Every step is an act of dedication, ensuring purity of flavor and unparalleled quality.
1. Source
We travel the world virtually to find the top 5% of cacao beans, paying farmers fairly for their quality, ensuring ethical and sustainable practices.
2. Roast
Each origin is roasted differently to coax out its unique, intrinsic flavors—be it fruity, floral, or earthy. A delicate balance of time and temperature.
3. Winnow & Grind
We crack the beans, separate the nibs from the shells, and then stone-grind them for up to 72 hours until they become a liquid-smooth, silky chocolate liquor.
4. Age
After grinding, the chocolate is aged for several weeks. This crucial period allows the flavors to mature, deepen, and mellow, creating a more complex and harmonious palate.
5. Temper & Mold
The final, precise heating and cooling process that gives our chocolate its signature snap, beautiful sheen, and perfect melt-in-your-mouth texture. Then, into custom molds.
